The NomNom Recipe Thread, gamer edition

We all want to be healthy, right? No sitting around during marathon gaming sessions eating greasy chips and guzzling energy drinks. There have been some ideas here and there on the site, but let's make a big thread of all the delicious things. The recipes don't have to be healthy, I suppose, but let's make them somewhat friendly for those who don't have a degree from the culinary institute or a professional style kitchen at least.

I am going to start with something that is so easy it's barely a recipe. Since I discovered these I have not had a single craving for chips or processed crackers. They are freaking amazing and you can customize them to your tastes very easily. I'll start with the very basic recipe then add some suggestions for variations.

Won Ton Snack Crackers
IMG_7634_-_Version_2.jpg
Ingredients
Wonton Wrappers
Olive Oil
Salt & Pepper
(seriously, that's it)
1. Cut the won ton wrappers in half. I've seen it done diagonally or cut into fourths for little wheat thin size crackers, but I like the rectangles so I can dip 'em if I want.
2. Lay wrappers on a baking sheet. They can be touching or overlapping a tad, it's not a big deal. These are pretty much impossible to screw up.
3. Brush with olive oil. To make this even easier I bought an olive oil mister for like 8 dollars. Pump it up and spray a fine mist of oil over the won ton wrappers. Easy peasy.
4. Sprinkle lightly with salt and pepper.
5. Bake at 300ish for 8-10 minutes or until they just start to brown. I can't be more specific here because my oven is totally borked and the temperature fluctuates like mad.
6. Let crackers cool and eat 'em!
The above is the basic recipe. Now, you can do damn near anything with these. I've used cajun seasoning, sesame seeds, shredded parmesan cheese (fresh, not that fake crap in the plastic jar), cayenne, all sorts of stuff. Just open your spice cabinet and go to town. If you want them to look all pretty you can chop some parsley and sprinkle it on before baking, but I find it mostly falls off before you can eat them anyway.
I make them in big batches (at least 2 packages of wrappers at a time) and store them either in gallon ziploc bags or big tupperwear containers. As I mentioned, my oven is wonky but if you play with it you can use 2 baking sheets and get to where you have time to prepare one sheet just in time for the previous sheet to be done.
I'm telling you, these crackers are amazing, healthy and so crunchy. I'll eat one on mumble sometime and it'll hurt your ears. They are incredibly good with salsa, too. They are hearty enough to stand up to most dips. Best of all, no added sugar and no ingredients you can't pronounce or find in nature. Just yummy goodness.
Enjoy!

Baked Kale Chips

Take a bunch of Kale and rip the leaves off the stems in nice bite size pieces.
Toss the pieces in a bowl with some olive oil to coat the leaves
place on a cookie sheet and sprinkle with salt (and/or whatever else you want for seasoning)
put in a 350 degree oven for about 10 minutes. or until crispy but not burnt.
I usually flip them at 10 mins cause the parts that are touching the pan don't crisp up. 2 or so mins back in the oven crisps them up.

Super yummy, crispy like light chips and kale is one of the best leafy greens for you in terms of nutrients.

Here's a simple salsa/topping I like to make
Get a handful of artichoke hearts, roughly 2 or 3oz black olives, 1 tomato, a bit of diced red onion, some cilantro.
Dice or mince all those delicious little veggies up, squeeze a lime or two over the top, add some garlic salt to taste! Flavor improves if you let it sit for awhile and let the juices flow about<3

EDIT: Forgot about jalepeno! One fresh, deveined and diced!

Here's some of my drunken facebook gems:
How I cook crab legs: Preheat oven, get baking dish, pour in the rest of the beer I'm drinking, grab two more beers (one to add in, one to drink), throw in a couple shots of whatever liquor we have, add butter and seasoning, toss in oven. Forget about it. Remember an hour later. Done

Chicken, garlic, red bell peppers, onions, paprika, a splash of franks red hot, let it all simmer in modelo especial until it's gone.
Simple. Juicy. Delicious.
Bonus points: Mini sweet peppers halved, stuff with chicken, cover with pepperjack cheese.
Bake until cheese gets that perfect browning

Here is my bachelor skillet meal.

Ingredients:
1 package of beer brauts
3 ears of sweet corn. (any corn works, but make sure its fresh not canned. Sweet corn tastes best here)
1 pack of red potatoes. You want enough to be equal amounts of all 3 foods
1 beer of your choice. I like lighter color beers in this, cause darker or stronger tasting beers kinda overpower it.
oil (olive is best) salt and pepper

prep:
  • cut all the corn off the cob. Just run a knife down the side like 4 or 5 times. put em off to the side
  • cut open the brauts and throw the casing away. put it off to the side too
  • cut the potatoes, skin on, into cubes or irregular pieces about the size of a dime or your thumbnail.

Cook time:
  • Get a big deep skillet like the electric ones that have 3 settings and put it on med high. (or med high on the stove top with a reg skillet)
  • Put the potatoes in the skillet and put about 2 tbs oil in and stir around till they are coated. Salt and pepper them.
  • Cook the potatoes till they get a good crispy outside then pull them out and put them to the side. On a paper towel works good.
  • Put the beer brauts in and use your spatula or wooden spoon to break all the meat up like ground beef. You want little meat pellets about the size of your pinky nail.
  • Cook the brauts till they are browned and a little charred.
  • Throw the corn, and the cooked potatoes back in. Stir well so its all mixed.
  • Dump the whole beer in and cook on high till the beer is all absorbed and/or cooked off.
  • Eat. It should feed about 4 since its really heavy dense food. Its really good cold or reheated too.
Its not the fastest food to cook, takes an hour or less, but it will fuel any gaming session like no bodies business.

Those chip ideas are brilliant. I feel like the wonton ones will go well with humus. Definitely going to be making those for Wild star release.

Yeah, I foresee some of those won ton crackers in my near future.. MMmmm.

Here is my bachelor skillet meal.

And here is me making it. Slight variation. I grilled the brauts because I like that crunchy texture. Sliced them up and added them to the potatoes once they were done. Perfect in season Jersey corn. I used Harp beer. Tried sprinkling a little cheddar cheese on it, but that is definitely optional. It tasted great and my wife is and I are fans!

I swear we used to have a chef on the site. That looks great btw. He used to post his creations. Amaze balls.

Wrap that up in a flour tortilla and you have yourself a helluva breakfast burrito. :)

That was claark. he had the profile pic of him shaving a 90lb (or so) Parmesan cheese that looked like an elephant toenail.

Made these the other day for breakfast and they turned out really good. The next time I make them I'll add a picture.

Campfire Pancakes
- Make your pancake batter as you would normally. I used instant, but you could easily make it scratch.
- Crush golden graham cereal and put it aside. Put chocolate chips to the side.
- Over a low flame pour your batter onto a griddle or skillet pan. I like adding the crushed graham and chocolate chips to the raw batter immediately after pouring. You could also make the pancakes as normal and just top with the graham and chocolate.
- Set finished pancakes to the side.
- Over an open flame toast a marshmallow. I use the giant campfire marshmallows because they are amazing and a lot easier to toast.
- Place the toasted marshmallow inbetween two pancakes (top with graham/chocolate chips if not already included) and serve as is or with your favorite syrup.
